Jamaican Bananas Foster

And now, for something completely sybaritic...

To atone for a random waste of blogspace yesterday, here is one of my favorite desserts...

You will need:
1/2 c shredded coconut
6 T good unsalted butter
1/3 c brown sugar
4 ripe but firm bananas, sliced
1 tsp cinnamon
1/2 tsp nutmeg
1 T ginger
a little allspice
1/2 c Appleton Estates or Myers rum (gold or dark)

1) Toast the coconut in a dry non-stick skillet over low heat until just golden; set aside.
2) Melt butter in the skillet; add brown sugar and stir until dissolved.
3) Sauté banana slices in this mixture for a few minutes; when they begin to brown, add the coconut and spices.
4) Add the flaming rum and serve immediately over 1 scoop vanilla ice cream and 1 scoop mango sorbet, or vanilla ice cream accompanied by fresh mango slices...
Makes 4 thoroughly decadent servings.
